Abstract: This study aimed at evaluating the phenolic content, antioxidant activity and optimization of extraction parameters on the zarandaja Lablab purpureus (L.). The sample was from the parish of Malacatos, belonging to the canton and province of Loja. To obtain the extracts, three variables were used: ethanol %, temperature and sample / solvent in three levels each. Subsequently measurements of the total phenol content was performed by the Folin-Ciocalteu and method antioxidant activity it was measured by the ABTS assays, DPPH and FRAP. It was determined that the optimum conditions for total phenols were: solvent H2O, temperature 28°C, sample/solvent 25 g/75 mL and time 90 min with a value of 369.26 ± 5.26 mg EAG / 100g, values in the antioxidant capacity Depending on the trial they were; ABTS 20.11 ± 0.87 μmol ET/g, DPPH 41.58 ± 1.18 μmol ET/g and FRAP 5.60 ± 0.08 μmol ET/g to the optimum conditions of: ABTS solvent 20% EtOH, temperature 60°C, sample /solvent 25 g/75 mL and time 90 min; for DPPH solvent 80% EtOH, temperature 28°C, sample/solvent 6.66 g/ 93.33 mL and time 90 min; for FRAP solvent H2O, temperature 38°C sample/solvent 25 g/75 mL and time 90 min
Description: Este estudio tuvo como objetivo la evaluación del contenido fenólico, actividad antioxidante y optimización de parámetros de extracción en la zarandaja Lablab purpureus (L.). La muestra fue proveniente de la parroquia Malacatos, perteneciente al cantón y provincia de Loja. Para la obtención de los extractos se trabajó con 3 variables: % de etanol, temperatura y relación muestra/solvente en tres niveles cada una. Posteriormente se realizó las mediciones del contenido de fenoles totales mediante el método Folin-Ciocalteu y la actividad antioxidante por medio de los ensayos ABTS, DPPH y FRAP. Se determinó que las condiciones óptimas para fenoles totales fueron: solvente H2O, temperatura 28°C, relación muestra/solvente 25 g/75 mL y tiempo 90 min con un valor de 369.26 ± 5.26 mg EAG/100g, los valores en la capacidad antioxidante dependiendo el ensayo fueron; ABTS 20.11 ± 0.87 µmol ET/g, DPPH 41.58 ± 1.18 µmol ET/g y FRAP 5.60 ± 0.08 µmol ET/g, a las condiciones óptimas de: ABTS solvente 20% EtOH, temperatura 60°C, relación muestra/solvente 25 g/75 mL y tiempo 90 min; DPPH solvente 80% EtOH, temperatura 28°C, relación muestra/solvente 6.66 g/93.33 mL y tiempo 90 min; FRAP solvente H2O, temperatura 38°C, relación muestra/solvente 25 g/75 mL y tiempo 90 min.
