Abstract

Abstract: This work has as main objective to achieve collect all data and information concerning food, current and historical basis, of the Celica and Paltas cantons, belonging to the Commonwealth of the Dry Forest that is located in the province of Loja. Data collection was obtained based on the stories of their own people who shared their knowledge and culinary legacy, thanks to which culture manifests itself; information was obtained regarding the primary food products grown, meet, breed and hunt in the area, and on native dishes that can be cooked with them. It has been possible to demonstrate the properties, nutritional values, consuming places, local names and other information about the foods of the area, which finally a proposal for catalog that is expected to serve as a document that reflects the gastronomic identity of the zone.
