Estudio sobre los factores culturales vinculados a la parte alimentaria del cantón Yacuambi

Abstract

The objective of this research is to collect information about the cultural factors linked to the Yacuambi canton, as well as to identify the existing gastronomic identity in the canton, which houses three important ethnic cultures of Ecuador such as: Kichwa Saraguro, Shuar and Mestizo. The interrelation of these three cultures converts the canton into a multicultural destination where their ancestral manifestations are reflected in the nutritional habits of each culture, which have been affected over time, by the non-practice of the new generations and others factors that will be exposed and analyzed in the present work. The methodology used constitutes a fundamental pillar that sustains the research by means of the implementation of techniques and tools such as: surveys, observation forms, on-site visits, focus groups that were applied in the settlers, who mentioned important issues such as: the names of the primary and elaborated products, the habitual places of consumption and the state of conservation of the product and ancestral dishes that at present are being lost.
