Análisis de los platos más representativos del cantón Loja en sus parroquias urbanas para la elaboración de una Ruta Gastronómica de Restaurantes

Abstract

The purpose of the research is to propose a Gastronomic Restaurant Route through the analysis of the most representative dishes of the six urban parishes (El Sagrario, Sucre, El Valle, San Sebastian, Punzara and Carigán) of the Loja canton in Loja province located in the South of Ecuador. The work is justified in the revaluation of the products and traditional dishes of the town, argued in the lack of studies and initiatives at the urban level. The main objective is the analysis of the dishes identified as representative, which will be used in the concluding section for the formulation of a tourist-gastronomic product. The methodology used was the bibliographic review, the application of surveys and interviews. The proposal of this work will be designed in relation to the available gastronomic resources and identified members; resulting as a final contribution the product brand, itineraries of activities, the routes drawing and finally the marketing strategies to be applied.
