Abstract: Ecuador is a megadiverse country in the context of wildlife, this resulted in the emergence of different cultural expressions developed around gastronomy. For this reason, there are many varieties of flowers in the country, many of these species have been traditionally used in medicinal form for the amount of benefits they bring to health. Currently gastronomic trends have encouraged the implementation of new products within the offers of the gastronomy sector, among the most important has been the inclusion of floral species that allow to create a harmony between the ingredients that make up a particular dish. Based on this premise, a study was established that aims to determine the edible flower species presents in the Loja city, with which an organoleptic study was carried out to determine the flavor that represents them. All this with the purpose of elaborating a catalog that allows to obtain relevant information of each species, in this way these ingredients can be included in the different gastronomic creations based on their flavor and aroma.
Description: Ecuador es un país megadiverso en flora y fauna, esto dio como resultado el surgimiento de diferentes expresiones culturales desarrolladas alrededor de la gastronomía. Por esta razón, existen muchas variedades de flores dentro del país, muchas de estas especies han sido utilizadas tradicionalmente en forma medicinal por la cantidad de beneficios que aportan a la salud. Actualmente las tendencias gastronómicas han incentivado la implementación de nuevos productos dentro de las ofertas del sector de alimentos y bebidas, entre las más importantes ha sido la inclusión de especies florales que permitan crear una armonía entre los ingredientes que integran determinado plato. A partir de esta premisa se estableció un estudio que tiene como fin determinar las especies de flores comestibles presentes en la ciudad de Loja, con ellas se realizó un estudio organoléptico que permitió determinar el sabor que las representa. Todo esto con la finalidad de elaborar un catálogo que permita obtener información relevante de cada especie, de esta manera se puede incluir estos ingredientes en las distintas creaciones gastronómicas basándose en su sabor y aroma.
