Abstract: In this research the firigüelo (Vigna unguiculata) was evaluated as a source of antioxidants. The sample was from the canton Macará, Loja province. The content of total phenols by Folin Ciocalteu method and the antioxidant activity by ABTS, DPPH and FRAP methods was measured. The results obtained were 299.401 ± 3.59 mg EAG / 100 g in phenolic content, and 46.18 ± 0.29 µmol ET/g, 135.32 ± 2.55 µmol ET/g and 16.34 ± 0.33 µmol ET/g of antioxidant activity using ABTS, DPPH and FRAP, respectively. The optimum extraction conditions for certain total phenols were: solvent water sample / solvent 14.28 g/90 mL, temperature 60°C and 30 minutes. And the conditions for the antioxidant activity of ABTS were: 40% ethanol, sample / solvent 10 g/90 mL, temperature 20°C and 30 minutes. To DPPH: 54% ethanol, sample / solvent 16.66 g/83.34 mL, temperature 36°C and 30 minutes. And FRAP: 40% ethanol, sample / solvent 1:15, temperature 46°C and 30 minutes.
Description: En el presente trabajo de investigación se evaluó el firigüelo (Vigna unguiculata) como fuente de antioxidantes. La muestra fue proveniente del cantón Macará, provincia de Loja. El contenido de fenoles totales se midió por el método Folin- Ciocalteu y la actividad antioxidante por los métodos ABTS, DPPH y FRAP. Los resultados obtenidos fueron 299.401 ± 3.59 mg EAG/100 g en contenido fenólicos, y 46.18 ± 0.29 µmol ET/g, 135.32 ± 2.55 µmol ET/g y 16.34 ± 0.33 µmol ET/g de actividad antioxidante mediante ABTS, DPPH y FRAP, respectivamente. Las condiciones óptimas de extracción para fenoles totales determinadas fueron: solvente agua, relación muestra/solvente 14.28 g/90 mL, temperatura 60°C y 30 minutos. Y las condiciones para la actividad antioxidante de ABTS fueron: 40% de etanol, relación muestra/solvente 10 g/90 mL, temperatura 20°C y 30 minutos. Para DPPH: 54% de etanol, relación muestra/solvente 16.66 g/83.34 mL, temperatura 36°C y 30 minutos. Y para FRAP: 40% de etanol, relación muestra/solvente 6.66 g/90 mL, temperatura 46°C y 30 minutos.
