Abstract: Gastronomy plays a fundamental role in tourism because it allows know the way of eating a place with a cultural focus. The present work of The research has focused on investigating and analyzing the value of gastronomy ancestral and traditional that the parish of Jimbura possesses, for this it has counted on the participation of residents of the sector familiar with the subject with whom it has been socialized, through direct interaction in a Focus group and in interviews. The achievement of this has allowed us to determine a great variety of ancestral dishes of which selected some to form a gastronomic proposal. In addition; in the The research has been based on information from the INPC (National Institute of Cultural Heritage), which was done through the records of cultural heritage registration immaterial; allowing to complement knowledge, generate interest, and at the same time; revalue and propose new ideas in order to strengthen the gastronomic activity of the parish.
