| Abstract: | Abstract:The objective of the this study was to evaluate the efficiency from supercritical co-precipitates of phenolic compounds of mango and to quantify the antioxidant activity using methods of DPPH, ABTS and total phenols content was performed using the Folin-Ciocalteu reagent. The best antioxidant activity by the DPPH method was obtained at a concentration of 831. 5±1 µmol ET/g Co, by the method of ABTS was obtained at a concentration of 585. 0±1 µmol ET/g Co, and the higher content of total phenols was obtained at a concentration of 0.342±0.002 mg GAE/100g Co. Phenolic compounds begin to be released in the physiological solution at 15 min and it reached liberation controlled up to 8 hours. The best conditions for the different tests show many more favorable in the co-precipitates obtained at a pressure of 100 bar, a temperature of 40°C, at a flow rate of fluid 1 mL/min, and a relationship excerpt: polymer 1:1.5. These results indicate that the SAE processing of natural extracts is effective for improving the activity of natural antioxidant compounds. |
