Innovación turística del Barrio de Guápulo en la ciudad de Quito, a través del café de especialidad y barismo

Abstract

Abstract:Specialty coffee, a global trend that involves a series of systematic steps, from the cultivation, harvest and processing, highlights its quality and organoleptic characteristics. This art is emerging to be a factor of touristic interest applicable to gastronomic routes of producing farms or sectors of gastronomic tourism. For this reason the Guápulo neighborhood, a place with history, cultural attractions, privileged view and recurring touristic activity, it was taken into consideration for an intervention of tourism innovation applied to food and beverage establishments, based on the barista sector and equipped coffee stations, the quality of their raw materials as well as correct personnel training, including tourism management of the neighborhood and its inhabitants, which triggers in sources of work; and consequently, in a better quality of life.
