Description: In the present study, the use of vinegar as acidifying agent for curd as well as its influence on the performance, organoleptic characteristics and the processing time for mozzarella cheese were evaluated. The addition of 30 ml of vinegar per liter of milk was studied at different time intervals during the elaboration process: treatment A (no vinegar addition); treatment B (addition of vinegar immediately after cutting the curd), treatment C (addition of vinegar 45 minutes after cutting the curd) and treatment D (addition of vinegar 1 hour after cutting the curd), the best results were obtained employing treatment D, for which a yield of 12,87 % and processing time of 157,33 min were obtained. A sensory analysis between treatments A, B, C and D established that there was no significant difference between the studied treatments regarding the organoleptic characteristics. Therefore, treatment D was chosen as the optimum treatment for mozzarella cheese processing. For this treatment technical data sheet, its stability and also its lifetime were determined by physical-chemical and microbiological analysis.
En el presente estudio, se evaluó el uso de vinagre como agente acidificante de la cuajada y su efecto en el rendimiento, características organolépticas y tiempo de elaboración del queso mozzarella. Se adicionó 30 ml de vinagre por litro de leche en diferentes tiempos durante el proceso de elaboración: tratamiento A (sin vinagre), tratamiento B (inmediatamente después del corte de la cuajada), tratamiento C (a los 45 minutos después del corte de la cuajada), y tratamiento D (a una hora después del corte de la cuajada). El mejor tratamiento fue el tratamiento D, con un rendimiento de 12.87% y tiempo de elaboración de 157.33 min. El análisis sensorial indica que entre los tratamientos A, B, C y D no existió diferencia significativa entre las características organolépticas. Al mejor tratamiento (D) se realizó su ficha técnica y de estabilidad mediante análisis físico-químico y microbiológico, determinándose su vida útil.
